Both a toast and a tradition, wassail (Middle English wæs hæl — “be you healthy”) refers to the centuries-old English ritual of raising a cup of hot mulled cider to ensure a bountiful apple harvest in the year ahead. The drink itself—historically a blend of cider, ale, or mead—is gently spiced with cinnamon, ginger, and nutmeg, sweetened with sugar, and finished with a bit of toast floating on top.

To Brew (1 Gallon): In a large pot, combine 1 gallon of fresh apple cider, ale, or mead with ⅓ cup of wassail spices (in the enclosed spice bag) and ½ cup sugar. Simmer gently over low heat for 1–2 hours. Serve warm by the fire—or chilled, for a refreshing twist.
